I later learned that bagels are supposed to be chewy and dense. I don’t think I’ve ever had a bagel at a restaurant before. Hanks Bagels replied to me with a very kind message stating that next time I could request to have it toasted, which would soften the texture, albeit altering the authentic bagel quality.
